1 pkg Quick ‘n Easy Preparation Couscous Maison (350 gr / 12 oz)
4 spring onions, finely chopped
¾ cup fresh parsley, chopped
½ cup fresh mint leaves, chopped
¾ cup of fresh basil, chopped
½ medium onion, sliced thin
4 T. olive oil
3 medium tomatoes, finely diced
½ T. balsamic vinegar
Juice of 2 lemons
½ t. white pepper
½ – ¾ t. salt

How to prepare

  1. Prepare couscous according to directions on package.
  2. Place prepared couscous in a large serving bowl. Add the rest of the ingredients and mix well. Place mixture in the refrigerator about an hour, and serve cold.


Used as an appetizer, this deliciously refreshing salad is a wonderful way
to start any meal. And since most flavors go well with couscous, the herbs and other ingredients can be varied and altered to suit your taste, the season and the availability of ingredients.
