½ package of Couscous Maison quick-preparation couscous
2 teaspoons cumin
2 teaspoons oregano
2 large sweet potatoes, cooked and mashed (approx. 1kg / 2 lbs)
2 potatoes, cooked and mashed
3 eggs
200g (approx. 7 oz) grated Bulgarian cheese
2 teaspoons coarsely ground black pepper
1 teaspoon rosemary
Butter and oil for frying
Salt to taste

Ingredients for Yoghurt Dressing

2 containers 3% yoghurt (approx. 2 cups)
2 garlic cloves, crushed
1 cucumber, grated
2 tablespoons mayonnaise
2 teaspoons Italian mixed spice
1 teaspoon coarsely ground black pepper
Salt to taste

A great dish for young and old alike, and fun for guests, served hot or cold

How to prepare

  1. Prepare the couscous following the instructions on the package, and add cumin and oregano.
  2. Mix together all yoghurt dressing ingredients and place in refrigerator to chill for at least a half hour.
  3. Mix prepared couscous together with all other latke ingredients in a bowl.
  4. Heat up a frying pan with oil and butter.
  5. Form latke mixture into pancakes and fry.

Serve latkes, hot or cold, with cold yoghurt dressing.
