4 fillets of Sea Bream
1 package Couscous Maison quick-preparation couscous
6 garlic cloves, peeled and halved
4 garlic cloves, unpeeled
¼ cup olive oil
2 red peppers, cut in quarters
4 hot red peppers (for those who like it hot)
1 sprig of coriander, coarsely chopped
1 tablespoon paprika
½ teaspoon ground red chili pepper
1 teaspoon white pepper
2 teaspoons all purpose hot seasoning mix
1 cup water

The sauce makes the dish, and what could be better that couscous to absorb its flavors. The wonderful combination of ingredients creates an easy-to-prepare, festive and impressive main dish.

How to prepare

  1. Prepare the couscous following instructions on package.
  2. In a heated pan with olive oil, fry the garlic till golden brown.
  3. Add all other ingredients except for couscous, fish and coriander.
  4. Cook over low heat for about half an hour until gravy is reduced by half.
  5. Add fish to pan, cover and cook for about 10 minutes.
  6. Pour gravy over couscous, place the fish on top, and serve.

Serve latkes, hot or cold, with cold yoghurt dressing.
