1 package Couscous Maison quick-preparation couscous
2 teaspoons turmeric
For meatballs
500g (1 lb) chopped meat
1 onion
1 carrot
1 sheaf parsley, chopped fine
2 teaspoons cumin
2 teaspoons spicy seasoning mixture
2 teaspoons Italian seasoning mixture
½ jar of pitted black olives
Salt to taste
Oil for frying
For gravy
2 garlic cloves
1 container tomato sauce (about 1 cup)
2 tomatoes, peeled and cut into chunks
½ jar of pitted black olives
½ cup water
2 teaspoons paprika
2 teaspoons spicy seasoning mixture (optional)
1 teaspoon white pepper
Salt to taste

How to prepare

  1. Prepare couscous following instructions on package, and adding 2 teaspoons of turmeric.
  2. Prepare the meatballs: Mix together all ingredients for meatballs. Form into small balls and fry lightly until outside of meatballs look cooked.
  3. Prepare gravy: Lightly fry the garlic, and then add the tomatoes, olives, tomato sauce, water and spices. Bring to a boil and add the meatballs. Cook for about 30 minutes on low heat.
  4. Serve meatballs on a bed of couscous, with gravy poured over.
