Serves 6-8


1 pkg. Quick ‘n Easy Preparation Couscous Maison (350 gr / 12 oz)
1 chicken (about 1.5 kg or 3.3 lb), cut into 6-8 sections
2 onions cut into thin strips
2 tomatoes, cut into quarters or eighths
½ kg (approx. 1 lb) of fresh peas (or frozen, or canned)
8 sprigs of parsley, finely chopped
2-3 stalks of celery, finely chopped
6 sprigs of coriander
2 T. oil
½ – ¾ t. hot paprika
½ t. black pepper
½ – ¾ t. salt
3 cups of water

How to prepare

  1. Heat oil in a deep wide pan. Add tomatoes, onions, and chopped parsley, coriander and celery. Cook for 2-3 minutes, stirring occasionally. Add black pepper, salt and paprika, and mix well. Cook for another 5 minutes.
  2. Add the chicken parts, cover the pan, and cook for 10 minutes. Then add water, cover pan and cook for 7-8 minutes. Next, mix in the peas, replace cover, and cook on moderate heat for 40-50 minutes.
  3. Prepare couscous following instructions on the package.
  4. Place prepared couscous in a large wide bowl. Spoon out the chicken parts and peas, and place on top of the couscous. Pour over remaining sauce, and serve.
