How to prepare
- Heat oil in a deep wide pan. Add tomatoes, onions, and chopped parsley, coriander and celery. Cook for 2-3 minutes, stirring occasionally. Add black pepper, salt and paprika, and mix well. Cook for another 5 minutes.
- Add the chicken parts, cover the pan, and cook for 10 minutes. Then add water, cover pan and cook for 7-8 minutes. Next, mix in the peas, replace cover, and cook on moderate heat for 40-50 minutes.
- Prepare couscous following instructions on the package.
- Place prepared couscous in a large wide bowl. Spoon out the chicken parts and peas, and place on top of the couscous. Pour over remaining sauce, and serve.
