1 package Couscous Maison quick-preparation couscous
1 aubergine (unpeeled) sliced into large cubes (about 2cm, just under 1in.)
4 garlic cloves, peeled and sliced
5 tomatoes, blanched and cut into large cubes
½ cup parsley, coarsely chopped
½ cup olive oil
½ cup freshly squeezed lemon juice
2 teaspoons paprika (sweet or hot)
1 teaspoon black pepper
2 teaspoons cumin
Salt and pepper to taste

This tasty salad is easy to prepare, and makes a lovely appetizer, sandwich filler or creative side dish.

How to prepare

  1. Prepare the couscous following manufacturer’s instructions.
  2. Heat a frying pan with ¼ cup of olive oil. Fry the garlic till golden brown. Add the aubergine and mix.
  3. When the aubergine is browned, add the tomatoes and cook on a low heat for 25 minutes. Let cool for about 10 minutes.
  4. Remove the contents of the frying pan to a bowl. Mix together all other ingredients, and serve.
