1 pkg Quick ‘n Easy Preparation Couscous Maison (350 gr / 12 oz)
¼ cup fresh parsley, chopped
8-10 sprigs of mint leaves, chopped
10 sprigs of coriander, chopped
7 sprigs of basil, chopped
5-6 T. olive oil
½ cup fresh squeezed lemon juice
2 red peppers – roasted, peeled, and diced
2 yellow peppers – roasted, peeled, and diced
3 green peppers – roasted, peeled, and diced
½ medium sized onion, sliced
2-3 garlic cloves, crushed
¼ t. salt and pepper, to taste
400 gr (14 oz.) salty white cheese, goat cheese, or Bulgarian cheese, cut into medium sized chunks
Roasted almonds

How to prepare

  1. Prepare couscous according to directions on package.
  2. To prepared couscous add chopped herbs, diced peppers, oil, lemon juice, garlic, salt and black pepper, and mix well. Place mixture in refrigerator for 1 hour.
  3. Remove from refrigerator and place mixture in large serving bowl. Sprinkle chunks of cheese over the top, garnish with roasted almonds, and serve.
